Many of you LOVED the Squash Bake from the dinner at the Missionary Church at Christmas. We were lucky enough to get a copy of the recipe, and at least three of us made it for our own Christmas dinners. To tell you the truth, it was also the breakfast, lunch, dinner AND birthday cake on my birthday. :-)
Brenda Clark's Squash Bake
1 small squash (I use 4 generous cups)
1/2cup mayo (not miracle whip)
½ cup finely chopped onion (I put mine in food processor)
1 egg beaten
1 tsp sugar
salt & pepper to taste
Topping
¼ crushed soda crackers (food processor)
2 tbsp. parmesan cheese
1 tbsp. melted butter
Bake uncovered, 30-35 minutes
I have made the recipe as above and used buttercup
squash. For the church I used butternut
squash. I am sure you could use the
squash of your choice.
When I make it for the church I multiply by at least 4 and
only use 1 cup onion. I feel the amount
in the recipe would be very overpowering.
Also when you make large batches it takes a good hour to cook.

Squash for Quilt Guild was hubbard. I used 20 cups of squash and multiplied
everything else accordingly (x5) except for onion, still only used 1 cup. Baked for 1.5 hours at 350.
